Could a project name be continued as „Less table more…?“ What does Less table talks about?

Less table is a creative design studio, which activites are mostly related with food, feelings and values. Name is a hint about eternal possibilities to play with traditions, habits and meanings. „Less“ in the name represents going away from rules, getting adventures, discoveries, happiness. Also, table“ mentioned in the name, usually represents a table, which is a usual item, that could be found in every house. Eating, the same as table, is very mundane. You could imagine food as something much more fun than usual breakfast, lunch or dinner by TV or in the kitchen. Food is a gift, which is worth celebrating. Every meal could be interpreted as a small feast, which differs from the main-year celebrations, when tables are full with food. The less we overeat, the more we respect food and ourselves; it is easier to move and get other things done. This is meaning Less table gives: it creates entertainment, services to people, which helps to find a meaning. One and main soure of it – primitiveness and nature, embracing human insticts and creativty. Sometimes a walk in the forest could be the thing that we are seeking the most. Accidentally found rock also could become a perfect tool for food, for example, to mash peppers, herbs, nuts, crack an egg. It is important not only what we eat, but also where, why and how…

It is not surprising when music and arts are apparent in the streets, although food culture seems to be tied to tables, utensils, spaces of restaurants and home. Why is it important to connect food and city culture? Yet, why food culture is important?

All people are connected by vital substance – food. It is tightly involved with social evolution of humanity. Food culture has the same improtance and economy, religion, science, politics, philosophy and others. The main essence of food is bringing communities together. Traditions that are related with food let us to know and understand each other better. Unfortunately, urban people are alienatied. At the moment food culture is under pressure of fast food industry, import, therefore, it loses its value and is basically being adapted to standards of rushing cities and people. Eating at home becomes more and more ignorant, closed, at restaurants – shallow and luxurious. This is the reason why we want to remind and be reminded about the beauty of eating rituals and meaning of it, which brings peacefulness and love. Valuable food products, which taste bears traditions and interesting stories, are coming from small farms. Their landlors are almost magicians to the city, who connect both values of cities and villages. Respect to food, sustainable consumption take closer to nature, which inspires us to honest and simple communciation.

Your project probably could be called food architecture. In OpenHouse Vilnius’17 you made the whole city project out of food products, where cookies and tomatoes became buildings. For business presents design you used the layout of relief, also participated with exposition of Design fond. What influence does architecture has on this project?

Every creative process is a kind of a construction project. There are few periods how food design go togehter with architecture from theoretic perspective: plan – context, the basis of values – idea, facade, surface – embodiment, interior – an experience. This is similar to art of architecture, when everything comes from feelings. While working with food design there is a wish to get this vision closer to human beings, so it would be meaningful, would become a value, or maybe even a lifestyle.

When living in urban environment, architecture inspires to create food rituals. Less Table events, food adventures are happening right here, in buildings, which have distinctive interior and exterior. Before starting any practical work, we have to look around, because our surroundings are giving impact as well. Every place has its own context and decisions born in those places are unique. Then constructions start. It is important to decide and aforesee how people will be moving, how many of them could be fit in the place, how conveniently food could be reached. This spatial thinking is also common in architecture, only in different scale. Food design fills spaces with stories.

Creation of idea and its implementation is a long process, but food, especially when it is tempting for an eye, has an ability „to dissapear“ very fast. Projects of Less Table – moments?

The real beauty of food – its story, origins, is not seen from the frst sight, it takes much longer than creation of idea. Food is a perfect piece of nature and people, that is why aesthetics in the project are not the main goal and usually happens incidentally. Every task, each context give its own appearance on food. Less details, waste, tangibility are left, more honest contest is being created. People go easier to adventures when they are directly connected with food. You need to diest not only food, but also philosophical and social meanings. Direct emotion, feelins, arising questions are the most expensive values. Eternal stories are being stored in the moments of Less Table projects, where thoughts, moods and experiences are closely related with food.
